Mediterranean Stack with Hempseed Pesto

This plant powered meal is deliciously light and zesty and so simple to prepare. 

Slice and roast 1 eggplant, 1 red capsicum, 4 large field mushrooms, pumpkin. Stack roast veggies on a bed of baby spinach.

Hemp pesto: 1/2 cup hempseeds, 1/4 cup pepitas, 1/4 cup cashews, juice of 1 lemon, clove garlic, 1 cup basil, 1 cup rocket or other organic greens, 3 tbsps. water to blend (or Cold pressed olive oil), pepper and salt to taste. Blend and pour over your masterpiece. Top with cherry tomatoes and olives.
