Dragonfruit Smoothie Bowl with Coco-Chia Pudding

My fav breakfast, so filling and vibrant you can taste the life-force!

There are infinite variations on this meal depending on what's in season and available to you. I use a papaya as a bowl, scoop out the seeds or simply chop half a papaya and add to the dish with other tropical fruits such as pineapple, banana and mango.

  1. Blend 1 dragonfruit with 2 bananas and a little coconut water.

  2. Pour into bowl.

  3. Top with fruit and nuts and seeds of choice. I like brazil nuts, pepitas and cacao nibs. 

For the chia pudding:

  1. Soak half cup chia with 1 can of coconut mylk.

  2. Mix thoroughly and after half and hour add water to desired consistency.

  3. Add a teaspoon of real vanilla extract.

I use about 2 tablespoons on my breakfast bowl. The rest will last 5 days in the fridge.
