Mediterranean Stack with Hempseed Pesto

This plant powered meal is deliciously light and zesty and so simple to prepare. 

  1. Slice and roast 1 eggplant, 1 red capsicum, 4 large field mushrooms, pumpkin.

  2. Stack roast veggies on a bed of baby spinach.

Hemp pesto:

  • 1/2 cup hempseeds

  • 1/4 cup pepitas

  • 1/4 cup cashews

  • Juice of 1 lemon

  • Clove garlic

  • 1 cup basil

  • 1 cup rocket or other organic greens

  • 3 tbsps. water to blend (or Cold pressed olive oil)

  • Pepper and salt to taste

  1. Blend and pour over your masterpiece.

  2. Top with cherry tomatoes and olives.
