Raw Cacao Caramel Superfood Slice

A divine dessert fit for breakfast lunch or dinner. Packed full of super nutritious, high protein, mineral rich deliciousness. Amazingly easy to make and freezes for months (although it doesn't last a week in our family). Everyone who eats it is smitten. And yes it is refined sugar free!

Base:

Blend 1/2 cup cashews, 1/2 cup pepitas then seperately blend in 1 cup dates with a little water, add 1/2 cup cacao power, 1/2 cup coconut flour and 1/ 2 cup chia seeds stir together in a big bowl. Press into a cake dish or silicon cake mould.

Caramel:

1 cup tahini plus 1/2 cup coconut flower nectar and 1 tsp of vanilla extract. Stir and spread on the base.

Dark Chocolate topping:

Mix 1/2 cup cacao with 1/4 cup coconut nectar and 2 tbsp cup coconut oil. Spread on the caramel layer, sprinkle on cacao nibs and freeze for 1 hour. Slice and store. It wont last long!
