Sweet Potato & Zucchini Fritters with Lemon Herb Sauce

Gluten free, grain free, dairy free and full of flavour! These fritters are a quick, filling and delicious meal for any time of day. Use up any veggies you have in your fridge. 

Fritters:

  • 1 zucchini

  • 1 sweet potato

  • 1 cup buckwheat flour

  • 1 tsp cumin

  • 1 clove garlic

Method: (Makes about 8)

  1. Grate veggies, add flour, minced garlic and spice.

  2. Mix well and form into balls.

  3. Fry in a little coconut oil till golden brown on each side.

Sauce:

  1. Blend 1/4 cup tahini, 1/4 cup cashews with 1/4 cup water, juice of half lemon, Himalayan salt, pepper and add a big handful of fresh parsley and thyme. 

Serve fritters topped with sauce and salad.
