Sweet potato and zucchini fritters with lemon herb sauce
Gluten free, grain free, dairy free and full of flavour! These fritters are a quick, filling and delicious meal for any time of day. Use up any veggies you have in your fridge.
Fritters: 1 zucchini, 1 sweet potato, 1 cup buckwheat flour, 1 tsp cumin, 1 clove garlic
Grate veggies, add flour, minced garlic and spice. Mix well and form into balls. Fry in a little coconut oil till golden brown on each side. Makes about 8.
Sauce: Blend 1/4 cup tahini, 1/4 cup cashews with 1/4 cup water, juice of half lemon, hymalayan salt, pepper and add a big handful of fresh parsley and thyme.
Serve fritters topped with sauce and salad.
